Low light, and no second pass
Exposure gets decided before the doors open, because a rig that makes the room easier to shoot has already changed the room everyone came for. What is left is glass, sensor and where you stand — and the last of those decides more of the frame than the other two together.
A guest is not a subject
In a private dining room the camera is a guest that happens to be working. Nobody is directed, nothing is repeated for a better angle, and the measure of the night is that the pictures exist and no one remembers them being taken. Coverage that had to be noticed to work has already cost the client the thing they were paying to keep.
